Green teas are not fermented. The leaves undergo three treatments: roasting, rolling and firing. Roasting kills off the enzymes responsible for oxidization and involves heating the leaves to around 212°F, at which point the leaves become soft and flexible, ready for rolling. Many green teas are then hand-rolled into various shapes. Green tea is an excellent thirst quencher and can be drunk throughout the day. Low Caffeine
